Ingredients (For 2 Portions):
- 4 Sweet Potatoes
- 1 Avocado
- 1 Onion (a small one)
- Tomatoes ( a big one or different kinds of smaller ones)
- Sour Cream – 200 ml
- Pepper (I always use organic and fair trade blossom pepper)
- Olive Oil
First peel the sweet potatoes and then cut them into thick slices. Put them on a baking plate with some olive oil and bake them in the oven until they are getting a bit brown – for about 20 minutes with 180°.
Fo the “gaucamole” (it’s not the recipe for the origianl guacamole that’s why I put the quotation marks) cut the onion and the tomato(es) into very small pieces. Then peel the avocado and put it into a small bowl. Squish the avocado and add the sour cream as well as the tomato and onion cubes. In the end top it off with salt and pepper. As you can see on my picture I used homegrown cocktail tomatoes and green zebra tomato from my garden.
This is one of the simplest but no less delicious recipes :).
