• Half of a Butternut Squash (grated)
  • Rice Milk (or any other Milk) – 1 Cup
  • 2 Eggs
  • Cheese – 100 g (grated)
  • Puff Pastry – 250 g (from the Label “Schär”)
  • A Handful of Spinach
  • Pomegranate Seeds
  • A Handful of Goat Cheese
  • A Dash of Olive Oil
  • Herbs (Parsley, Chives, Rosemary or whatever you like:))
  • Salt
  • Pepper

First oil (with the olive oil) a round baking pan and then arrange the puff pastry on it. Then whisk the eggs and mix them with all the other ingredients in a bowl. Afterwards add this mix of eggs, cheese and pumpkin to the baking pan. Bake everything for about 20 minutes by 180°-200°… and ready is your rather unhealthy but absolutely delicious gluten free pumpkin quiche.
