• 1 Parsnip
  • 2 Potatoes
  • 1 Onion
  • 1 Clove of Garlic
  • Vegetable Stock – 500 ml
  • Olive Oi – 2 Tablespoons
  • Salt
  • Pepper
  • Parsley

First cut the onion and the garlic into small pieces and fry them in a pot with some olive oil. Then peel the potatoes and the parsnip and cube them as well. Add them to the pot, deglaze everything with the vegetable stock and cook it until the vegetable cubes are soft. Then add some salt, blend everything  – and ready is the delicious and healthy starter. I added some blossom pepper and dried parsley to make the soup look more nicely.
