Ingredients:

  • Potatoes – 500 g
  • 1 Big Sweet Potato (or a Piece of Pumpkin)
  • 1 Green Onion
  • 4 Eggs
  • Salt
  • Pepper
  • Mediterranean Herbs (Basil, Rosemary, …)

First cook the potatoes (you don’t need to cook the sweet potato). Then cut all the potatoes (also the sweet ones ;)) as well as the green onion into small pieces and whisk the eggs. The small the onion and the potatoes into the whisk eggs and add the spieces.

I made my own muffin trays out of small pieces of baking paper – this looks a bit more country-style. You need to put it in a muffin plate to keep them together. Bake them for about 30 minutes with 180° – 200°.

If you want to make cup cakes out of it you can add some sour cream and chives on top to make them even prettier and more tasty ;).
