Ingredients (for 2 Portions):

  • 1/2 Butternut Squash
  • 4 Medium Sized Potatoes
  • 1/2 Red Pointed Pepper
  • Goat Cheese – 100 g
  • 1 Green Onion
  • A Hand Full of Small Yellow Tomatoes
  • Olive OIl
  • Rosemary
  • Salt
  • Pepper

First cook the potatoes and peel them. Also peel the butternut squash. Then take a baking plate and put some olive oil on it. Cut all the vegetables and put them on the plate.  Afterwards crumble the goat cheese and scatter it over the veggies and in the end add salt, pepper and rosemary. Bake everything for about 20 minutes with 180°.

For non-vegetarians the mediterranean veggies are also a great side dish. 😉
