Ingredients (for 1 Portion):

For the Omelet

  • Zucchini (half of a small one)
  • Champignons (4 pieces)
  • Half of a Sweet Pepper
  • Smoked Tofu or Goat Cheese (ca. 50 g)
  • 1 Green Onion
  • 2 Eggs
  • A dash of Milk
  • Salt & Pepper
  • Provencal Herbs
  • Some Olive Oil

For the “Guacamole”

  • Avocado (half of a ready one)
  • Sour Cream – 2 Tablespoons
  • A dash of Lemon Juice
  • Salt and Pepper
  • poss. Chili Powder

First cut all the veggies into small pieces and stir-fry them. In the meanwhile whisk the 2 eggs with a dash of milk in a bowl. Add the fried veggies and mix them with the eggs.

Add some oil into the pan again and put the whole mixture into the pan. (You need a good pan that it doesn’t stick on the ground.) Cover the pan with a plate so it gets ready a bit faster. When the egg is not liquid anymore detach the omelet along the edge and cover it again with a plate. Then turn the pan so you can turn the omelet and fry it from the other side as well.
For the “Guacamole” just put all the ingredients mentioned above into a bowl
and mix it.
